Strasbourg is preparing to welcome a new giant of local gastronomy. After a long period of closure, the former Raven Café, located at the foot of a majestic neoclassical building at 5 Place du Corbeau, is about to be reborn in spectacular fashion. This colossal project transforms the former address into a 600-square-metre establishment capable of welcoming nearly 400 guests. Gone is the discretion of recent years, replaced by a brand-new brasserie that blends historical elegance with modernity. Through a complete restructuring carried out over several years, this historic venue promises to establish itself as a must-visit spot in Strasbourg, combining a grandiose architectural setting with an authentic and accessible culinary offering.

The spectacular awakening of a historic address

The transformation of 5 Place du Corbeau is a major event for Strasbourg city centre, where commercial renewal has sometimes seemed slow in recent months. The construction work, which began in 2023, is finally drawing to a close to breathe new life into this strategic crossroads in the Alsatian capital. This major project required the acquisition of several commercial units on the ground floor of the building, as well as the complete integration of the first-floor level. This spatial reorganisation has created an establishment with a total surface area of over 600 square metres, of which 400 square metres are entirely dedicated to welcoming the public. The former neighbourhood café is thus making way for a major metropolitan brasserie, designed to last and become a long-term fixture on the regional gastronomic scene.

An architectural showcase inspired by the cathedral

Visiting this site means discovering exceptional craftsmanship where every detail has been designed to blend harmoniously with the city’s history. The architects and project managers drew their inspiration from the Gothic architecture of Strasbourg’s famous cathedral. The use of Vosges sandstone on the floor and solid oak panelling gives the venue a timeless elegance. The vaults and rose windows recall the grandeur of Alsatian monuments, while the custom-made metalwork adds a contemporary, industrial touch. The noble materials were selected for their ability to acquire a patina over time, ensuring a warm atmosphere that will only improve with age. The windows, adorned with fine woodwork, complete a picture that breaks radically with the design of the former establishment.

The titanic project of the Schaller family

Behind this rebirth is a well-known player in the Alsatian restaurant scene. The Schaller family group is embarking on its most ambitious project here by combining several commercial units and an entire floor. Already at the helm of renowned establishments in Strasbourg such as Public House, Caupona, La Nouvelle Poste and the BoldBrew brasserie in the Port du Rhin, the Schaller family is now working across two generations to successfully meet this new challenge. This family project reflects a constant desire to boost the local culinary scene while preserving architectural heritage. In the longer term, the project also includes the development of an additional 60-square-metre space, currently in its raw state, which will be transformed into an independent boutique-café concept to further enrich the customer experience.

A traditional brasserie offering with continuous service

In the kitchen, Le Raven focuses on the authenticity and generosity of the great brasseries of yesteryear. The kitchens will provide continuous service from 11:45 am to 11:00 pm, offering updated brasserie classics. At weekends, service can be extended until 12:30 am to suit the rhythm of night owls. The menu will feature traditional bistro dishes made from rigorously selected ingredients. Every lunchtime, set menus and daily specials will punctuate the week for local workers and visitors alike. This continuous culinary offering meets a real demand in Strasbourg, providing welcome flexibility for lunch or dinner at any time of day in a prestigious setting.

BoldBrew craft beer at the heart of the experience

To accompany this gastronomic offering, the establishment relies on a carefully managed short supply chain. The entire draught beer selection will come from BoldBrew, the Strasbourg microbrewery owned by the group. Located in the Port du Rhin, this craft production unit will exclusively supply its various creations to fill the glasses of Le Raven’s customers. This internal partnership guarantees absolute freshness and highlights local brewing expertise. From light lagers to more complex and seasonal offerings, the selection will appeal to discerning enthusiasts while pairing perfectly with the robust dishes on the brasserie’s menu.

A complete living space from morning to night

With no fewer than 140 seats spread across two outdoor terraces, the establishment is set to become the new gathering point for epicureans. Le Raven’s impressive capacity is divided into several distinct spaces to suit every desire. Inside, the brasserie can accommodate up to 250 guests in a cosy and majestic atmosphere. Outside, a large 90-seat terrace looks directly onto the bustling street. For more intimate evenings, the building’s inner courtyard, which once served as access to offices, has been completely redeveloped into a 50-seat evening terrace. This layout allows Le Raven to thrive throughout the day, from the first morning coffee to the last drinks of the night.
