Behind this new bistro by L’Atelier Entrecôte & Volaille is a simple, almost radical promise in today’s Paris: getting back to basics. Few dishes, plenty of intention. An appealing, almost obvious idea. But in a city where everyone promises the same thing, we had to go and see if, here, simplicity really delivers on its promises.

With this fourth address, L’Atelier Entrecôte & Volaille continues its controlled expansion, capitalising on a concept that has already proven itself. A clear formula, a strong identity, and an obsession: doing things well, without overdoing it. Maison Mayane fits into this continuity, while seeking to slightly modernise the experience. The challenge is clear: to win over a demanding Parisian clientele, accustomed to polished concepts… and often disappointed by their execution.


An ultra-simple concept that arouses as much curiosity as expectation:
Three dishes. Not one more. A green salad to start, then a choice between French ribeye steak, Label Rouge free-range chicken fillet, or a smash burger. All accompanied by unlimited fries and a signature sauce whose recipe remains a closely guarded secret. On paper, it could hardly be clearer. An almost brutal proposition in its simplicity, which contrasts with the endless menus that have become the norm.

The experience begins, unsurprisingly, with a fresh, efficient salad. Then come the dishes, the heart of the concept. The ribeye, tender, is served in thin slices, as is the chicken. The burger, meanwhile, plays the minimalism card. An approach that appeals with its controlled aesthetic.


The house’s signature two-stage service is intriguing. The idea is brilliant: serving the dish in two stages to guarantee warmth and freshness. In practice, it divides opinion. Some see it as a real plus, others as a clever way of splitting the portion. One thing is certain: the experience is thought out, calibrated, almost choreographed.
And then there is the sauce. Central, omnipresent, it alone embodies the identity of the place. It is what defines the experience: addictive for some, too strong for others. It is impossible to remain neutral.
The unlimited fries ensure comfort, even if their consistency varies. The desserts – crêpes Suzette, crème brûlée, profiteroles – remain in a classic, reassuring register, without taking any real risks. A logical continuity in an experience that prioritises efficiency over surprise.
This is perhaps where Maison Mayane scores the most points. The decor, inspired by great Parisian brasseries, is perfectly executed: red banquettes, wood panelling, warm light. The place is lively, bustling, almost noisy at peak times, but undeniably successful. An atmosphere that makes you want to linger, despite service that is sometimes a little too fast.

29 euros for the full menu, 19.90 euros at lunchtime. At first glance, the equation seems unbeatable in the Parisian landscape. But here again, everything depends on expectations. If you buy into the concept, the value for money is convincing. If you expect more generosity, the perception quickly changes.
Maison Mayane does not leave you indifferent. It is an address designed to appeal immediately, efficient, clear, and contemporary. But behind this well-oiled machine, a question remains: do we come here for the pleasure of eating… or for the idea of the experience? Because we were won over by both… We give it a score of 9.5/10.
